While it's undoubtably the season for holiday baking and other wonderful treats– it's also the season for hectic schedules and hastily thrown together dinners. Life around the holidays is fun but it can also be insanely busy. I find myself whipping out my crock pot more often than usual during the month of December. I can toss dinner together in the morning and not give it another thought until it is time to serve.
One of my favorite crock pot dishes is a whole chicken, roasted with some simple seasonings and served with a side of veggies. It's like making your own rotisserie chicken at home. The uses for the chicken meat are endless. Soups, salads, dips, and of course served up on its own! This recipe is more like a guideline– seasonings can be easily interchangeable and if you really want to get fancy you can add some fresh herbs and citrus in the crock pot. Crock Pot Meal- Roasted Whole Chicken1 whole chicken- labeled fryer chicken most of the time
2 Tbsp spices (a mixture of salt, pepper, paprika and garlic is good)
Remove chicken from wrapper and remove the bag from the inside cavity of the chicken, discard this bag. Place the chicken, breast down in the crock pot. Sprinkle spices generously over the chicken. Cover the crock pot and cook on low for 6-8 hours. Serve.
