I seem to be on a bit of a kale kick lately. But really, why wouldn't I be? It's awesome stuff. These kale chips are one of my favorite ways to eat kale. They are crispy, salty, nutty and perfectly easy to pop in your mouth. I left Lily with the bowl while I was doing dishes and she wiped out half of the batch in 10 minutes–and looked like someone had poured a container of parsley flakes over her when she was finished. Adult food, toddler food and super food. Yes, please!
Kale Chips8 oz kale, washed, stems removed and broken into 2-inch pieces
1 Tbsp olive oil
1 tsp kosher or sea salt
Preheat oven to 350. In a large bowl combine all ingredients and toss until the kale is well coated. You may want to use your hands. Spread the kale in an even layer on a cookie sheet and bake for 10-15 minutes or until the kale is crispy and if you desire very slightly browned on the edges (I think the flavor is better when you let them get slightly browned). Remove from oven, cool and serve.
