Chewy Oatmeal, Chocolate Chip, Coconut Cookies


Growing up my mom made the absolute best cookies.  They were extra chewy, had chocolate AND coconut and were filled with special mommy love.  Seriously, how can you beat that?



If I had a choice of one thing that my mom could cook for me I would choose these–hands down.  On rainy days all I want to do is curl up with a plate of these–preferably warm–and watch a Jane Austen movie with my mom.  Just to be safe, make sure you stock up on the ingredients so on the next rainy day you can whip up a batch and eat them all.  They have lots of oats–healthy right?




Apart from being utterly delicious, these cookies are awesome because they are pretty fool-proof.  I have never, ever had a time when they didn't turn out– well except when I burn them which totally doesn't count.  


Chewy Oatmeal, Chocolate Chip, Coconut Cookies



Makes 4 dozen 2-inch cookies

3/4 cup butter, softened
1/2 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 1/2 cup flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 1/2 cup rolled oats
1 1/2 cup shredded coconut
1 1/2 cup chocolate chips

Preheat oven to 350.  In a large mixing bowl cream the butter and both sugars.  Add in the vanilla and eggs and mix well.  Sprinkle the baking powder, baking soda and salt over the batter and mix until well combined.  Mix in the flour and then the coconut.  Add the oatmeal and chocolate chips and mix until combined.

Drop tablespoons of dough onto a lightly greased cookie sheet.  Bake for about 8 minutes or until very lightly browned.  Do not over bake!

  2. Had to make them again today - the first batch was all gone and I bought a fun new cookie scoop on the weekend, so I needed to try it out ;) Substituted quartered dried cherries for half of the chocolate chips (will try dried apricots as well) - this is a good "use what you have" recipe!

    1. That sounds like a fantastic combination. I think I will try dark chocolate chips with the dried cherries. Those with the coconut sound like a perfect combination. I'm glad you are enjoying the recipe. It always makes me giddy to hear!

    2. WOW, i am so happy to hear that this worked out for you. Usually when i decide to substitute for healthier options ( like what you did just there) it usually comes out pretty nasty. But i will sure enough try this recipe as well! Seems super scrumptious!

  3. Had to bookmark these when I saw them the other day. I'm baking them now with the addition of dried cranberries from Trader Joe's. Oh my, are they delish, thanks for sharing. Tomorrow my retired teachers group has a fall luncheon and raffle - I'll be bringing a basket of these as my contribution to the raffle table (cookies for a cause)!

  5. Howdy, made this scrumptious cookies for my 5 kids, and they simply loved them! I'm no sara lee ya'll, but heck, you might think i was when using this recipe!! Simply delicious

  7. These are indeed scrumptious! I just googled "chocolate chip oatmeal coconut cookies" and I'm glad these came up. They are yummy warm from the oven, with a cup of hot coffee. I threw in some left over cashew pieces and used mini-chips, but the rest just like the recipe. Thanks for this one.
