Quick Noodle Stir Fry

My cooking style seems to be the following: grocery shop without planning ahead, look in my fridge and pantry and just figure it out.  The vast majority of the time this method works out well for me, actually it works out really well.  My favorite dinner recipes happen this way and the biggest perk is that they are made with ingredients that I keep on hand so I can usually make them without planning ahead. 

I am the first to admit–once in a blue moon I do get a flop– This is not one of those times.
 This tasty noodle stir fry is cooked up quickly with thin spaghetti noodles, a simple sauce and a combination of vegetables that can be interchanged depending on what you have on hand.  I used cabbage, broccoli, onions and a bag of frozen mixed vegetables.  If you have chow mein noodles or rice noodles they would be fantastic also. 

 This noodle stir fry is simply great dish for a busy day!

Quick Noodle Stir Fry

1 lb thin spaghetti or other thin noodle
2 cups broccoli florets 
2 cups cabbage, sliced thinly
1 medium onion, sliced
1 bag frozen mixed vegetables
3/4 cup soy sauce
1 cup chicken stock
3 Tbsp corn starch
1 tsp pepper
1/4 cup olive oil

Cook the noodles per package instruction.  Try and time this out so that they are ready at the same time that the vegetables finish cooking.

Heat the olive oil in a wok over medium-high heat.  Add the onion, cook for 1 minute, stirring once.  Add in the cabbage and cook for about 2 minutes, stirring frequently.  Add in the frozen vegetables and cook for 1 minute, then add in broccoli.  Add in 1 cup water and cover.  Steam for 1 minute and drain water out.  Return to heat.

In a small bowl, combine soy sauce, chicken stock, corn starch and pepper.  Pour this mixture into the vegetables and stir until sauce has thickened.  Add in the cooked noodles and toss until the sauce, vegetables and noodles are all well combined.  Remove from heat and serve.
