Grilled Summer Vegetables

There is something about grilling vegetables that just seems to welcome the summer in.  I love being able to make my whole meal on the grill while I relax on the back deck.  The awesome thing about summer around here is being able to find and/or grow wonderful local produce.  Anyone who has done any gardening knows that zucchini is one of those plants that will just explode with produce.  You just won't be able to keep up and will be at a loss with what to do with your zucchini.

This is a recipe you need in your repertoire if you ever get overwhelmed with zucchini.  Don't worry, this recipe is pretty flexible and you can really add whatever vegetable you want in there.  I often throw broccoli or asparagus in mine.  The vegetables I do try to keep standard are the peppers and onions.  Those are my favorite part and add some wonderful color and flavor.

Grilled Summer Vegetables

Yield: 4 side servings
Total Time: 25 minutes

2 zucchini
2 squash
1 onion
3 bell peppers (red, yellow and green work nicely)
1/4 cup olive oil
2 tsp salt
1 tsp pepper

Slice all vegetables into slices and chunks, making sure that the pieces are large enough that they will not slip through your grill basket.  Toss the vegetables in a bowl with the oil, salt and pepper.  Heat your grill basket for about a minute.  Cautiously add the vegetables into the grill basket (the flames might shoot up if some oil drips down into the grill).  Cook the vegetables, tossing every few minutes to allow even cooking, for about 10-15 minutes or until they are at the desired doneness you prefer.  Carefully lift the basket with oven-mitts and carefully pour the vegetables into a serving dish.
